Caramelized Onions

Ok, so you probably know about putting mushrooms or other things on a nice steak or piece of beef. Have you tried caramelized or candied onions?

This is a simple, fun, accompaniment or garnish that you will find other uses for besides on or with beef. The basic idea is to take a nice big yellow or white onion and cut it up into strips or slivers about 1/4" wide and several inches long. Dissolve some brown sugar into some brandy over a hot stove slowly, and then simmer the onions in the mixture and serve! Get the idea, yea, pretty simple yet plenty of room to also experiment. Ok, so get a nice sauté pan or skillet out and pour about 1/2 cup to cup of brandy into the pan and heat over low-med heat. Add about 3-4 table spoons of brown sugar and dissolve into the brandy. Important, be careful of open flames! You may want to add some more brown sugar or even maple syrup if you like. Fully dissolve and bring to light boil to reduce slightly adding the onions. Simmer the onions to cook and continue reduction and serve when cooked and caramelize or candied.  Serve in bowl or place on side dish.
