Drummies

Note: An alternative is to brine the drummies and then gril!

The staple of the Award Winning Rocking Tid Bit Bar!

Here is just one of the many Tid Bit Bar Wings/Drummies Recipes

Get a bunch of non flying wings and drummies or drummets, it really does not matter that much! and thaw out or be prepared to marinate overnight!   Depending on the crowd or event, generally it is easiest to do about 2-3 bags of the frozen or thawed drummies (about 3-4+ pounds or enough to fill a gallon ice cream pale.  Rinse and thaw if possible the chicken and prepare the marinade.  Ok, in a blender (hey, we have gotten sophisticated and lazy), combine about a 1/2 cup of orange juice, 8-12oz can of pineapple, several tables spoons of your favorite curry, dash or two of lemon juice, some fresh ground ginger, some fresh garlic, some white and lemon pepper, some lemon grass if you got it, tablespoon or two of balsamic vinegar, several dashes of habanario extract (dont worry about the heat), cover, and press the #10 or high speed button!  Let stand for a few minutes and add final seasoning to taste!

Cover chicken in large bucket, pail, or whatever with marinade and cover.  Shake to make sure all pieces get covered and shake or flip every hour or two to help marinate.  When ready, fire up the grill and place some kosher salt in a small bowl and grab the lemon pepper, tongs, something to sip on and get ready for the fun.  Place the chicken on the grill, sprinkle with lemon pepper and cook until done on one side, then dash lightly with the salt and turn to finish. The trick is not burn, but, sear, and then slow cook!

Serve as is, with favorite sauce, and something cool and refreshing!
